Forget about the traditional casserole with this Hoki and Mussel Casserole, a tasty dish that’s filled with kaimoana and is also quick and easy!

Ingredients

  • Olive oil - 2 Tbsp
  • Onion, diced - 1 small
  • Garlic cloves, crushed - 4
  • Carrot, diced - 1
  • Celery stick, sliced - 1
  • Potatoes, diced - 2 medium
  • Tomato passata - 1 cup
  • White wine - 1/2 cup
  • Water - 1/2 cup
  • Sugar - 1 tsp
  • Pinch of chilli flakes
  • Mussels scrubbed and rinsed - 10
  • Hoki, cut into 3cm pieces - 300 g
  • Basil leaves - 1/2 cup
  • Salt, to taste
  • Pepper, to taste
  • Crusty bread to serve

Method

  1. Heat the oil in a large casserole dish or pot. Add the onion, garlic, carrot, celery and potatoes, stirring to combine. Cover and cook for 10 minutes over a low heat until the potatoes are softening.

  2. Add the passata, wine, water, sugar, chilli flakes and simmer for 5 minutes to reduce the sauce.

  3. Add in the mussels and place the fish on top. Cover for a further 10 minutes, or until the mussels open up, and the fish is cooked through. Season with salt and pepper to taste. Sprinkle over the basil leaves and serve hot with crusty bread on the side.
