Crispy waffles

Ingredients

  • eggs , separated - 2
  • Sugar - 2 tsp
  • Milk - 3/4 cup
  • Vanilla - 1 tsp
  • Salt - 1/4 tsp
  • Self raising flour (300g) - 2 cups
  • Cornflour - 2 Tbsp
  • Butter - 80 g

Method

  1. To make batter: Beat egg yolks & sugar together, add milk, 1/2 cup water & vanilla, mix well.

  2. Sift dry ingredients into a bowl, add the egg mixture and melted butter.

  3. Beat mixture well into a smooth batter.

  4. Beat egg whites until stiff, fold into the batter.

  5. Allow to stand for 10 minutes before use.

  6. Preheat waffle maker as per your appliance instructions. Use 1/2 cup of batter for each waffle and when heated pour into the centre of the waffle maker. Close lid of the waffle maker and cook for 2 1/2 - 3 minutes depending on the level of browness is desired.

  7. Remove form waffle make with a plastic spatula.

  8. Ensure appliance has reheated to 'ready' status before making the next waffle.

  9. Waffles are delicious served with ice cream and maple syrup. However there are many variations that may be served.

Tip: Add any of the following before folding in egg whites to sweet waffles: 1/2 cups finely grated apple and 7 1/2 tsp cinnamon, 1 finely sliced banana & 1/2 tsp nutmeg, 60g melted chocolate, 1 tbsp grated lemon rind & 1/2 tsp lemon juice, 1/2 tbsp grated orange rind & 2 tbsp grand marnier or fresh strawberries & cream.
