To make crostini slice the bread into 14 to 16 slices, approximately 1cm thick. Brush each slice with a little olive oil and place on a baking tray in a single layer. Bake in a 200°C oven for 3 to 5 minutes, turning once, then remove and set aside to cool.
Layer each crostini with a slice of blue cheese then a slice of pear. Return to the oven for 3 minutes, or until the cheese has softened. Remove from the oven and drizzle the tops with honey before serving.
